  • Irresistible snacks and appetizers, such as Puff Pastry Samosas with Green Peas, and Sizzling Kababs.
  • Seductively spiced lentil dals, from the North Indian classic flavored with whole cinnamon, cardamom, and cloves to a Southern Indian version with dried red chilies, mustard seeds, and curry leaves.
  • Aromatic meat and seafood curries from Kerala & Goa, like Coconut Chicken with Cashews and spicy Goan Shrimp.

You can buy these ingredients at Indian or Asian grocery stores, or on the Internet. And eventually, when you find yourself cooking Indian food regularly, you may want to set up a pantry of some Indian ingredients.

Due to the simplicity of Indian cooking, very little equipment is required. In fact, most kitchens will already have everything needed to create a delicious Indian spread.

Most Indian Cooking is done on top of the stove, with very little equipments. For cooking most curries, lentils and vegetable a medium size saucepan with a lid will do. A wok is suitable for deep frying, a cast iron griddle is used for flatbreads and pancakes, and if you don't have a griddle a fry pan will do the job just as well.

An electric rice cooker is ideal to cook rice to perfection. To grind the spices an electric spice grinder can be used and a blender to chop onions, vegetables and other ingredients. A food processor can be used for mixing and kneading.

You will find it easy to create a delicious, successful Indian meal with no special equipment
